Once opened, it can typically be kept in the fridge for up to 48 hours or at room temperature in its original packaging for up to 24 hours. The fish roe is extracted using labour-inducing techniques and then carefully filtered, inspected, cured, and aged. Once ready, the Sevruga caviar is then immediately packaged and made available online for purchase to ensure ultimate freshness, flavour profile and texture.

About Sevruga (Starry) Caviar

Sevruga caviar comes from the Stellate (Starry) sturgeon, one most prized sturgeon species found in the wild in the Black, Azov, Caspian and Aegean seas in Europe and Asia.

The Starry sturgeon can grow up to an impressive 2.2 meters long (over 7 feet) and weigh as much as 80kg (180 lbs). Females can take up to 10 years to mature and begin producing its precious roe (fish eggs).

The amount of caviar you need will depend on the amount of people that will be enjoying it. As a rule of thumb, 28 grams (1 ounce) is enough for 1 to 2 people.

Although we do not recommend doing so, you can freeze a sealed jar or tin of caviar for up to one year. The caviar will lose some of its flavor and texture as time goes on.
A sealed jar or tin of caviar should be kept in the fridge around -2 to 0 Celsius (28 to 32 Fahrenheit) to preserve its freshness, flavor, and texture.

Sturgeon caviar comes in a wide range of colors, even from within the space species. For example, Ossetra caviar naturally comes in a range of colors from Golden Brown to Dark Brown so what you receive may differ slightly from what is pictures.
