Our bottarga can be stored for at least 12 months when sealed and refrigerated. Always consult the label for a precise recommended best-by date. Please store your grey mullet bottarga caviar in the fridge as soon as it is received.

Our bottarga is sourced ethically from wild-caught grey mullets in Italy, Greece, and other regions in the Mediterranean. Protecting our planet is extremely important to our mission and 10% of our profits are donated to various organizations that work to protect wild fish and restore their natural habitats around the world.
How our Bottarga is Made
Our bottarga is made using the roe sac of Mediterranean grey mullet. After carefully removing the roe sac, it is cleaned thoroughly before undergoing a special salting and curing process. Once cured, it is pressed before undergoing a final dry aging process to capture maximum taste and flavour. Once ready, the bottarga is then immediately packaged and made available online for purchase to ensure ultimate freshness.
