Storing and Preserving our Masago Caviar

Our masago (capelin roe) can typically be stored for up to six weeks in a fridge when sealed. Please store your masago caviar in the fridge as soon as it is received and taken out of our packaging.

We strongly recommend consuming our masago in one sitting for the best tasting experience. Once opened, it can typically be kept in the fridge for up to 48 hours or at room temperature in its original packaging for up to 24 hours. Always consult the label for a precise recommended best-by date.

Our masago is sourced ethically and legally from wild-caught European capelin. Protecting our planet is extremely important to our mission and 10% of our profits are donated to various organizations that work to protect wild fish and restore their natural habitats around the world.

How our Masago is Made

Caught in the wild sustainably and ethically, each capelin fish is hand-picked at peak maturity using the latest filtering and ultrasound technology. The fish roe is extracted carefully and then filtered, inspected, cured, and aged. Once ready, the masago roe is immediately packaged and made available online for purchase to ensure ultimate freshness, flavour profile and texture.
