The roe of the Ossetra sturgeon is known for its distinct nutty and buttery flavour, as well as its firm yet delicate texture. Storing and Preserving our Ossetra Caviar
Our Ossetra caviar can typically be stored for up to six weeks in a fridge when sealed. Please store your Ossetra caviar in the fridge as soon as it is received and taken out of our packaging.
We strongly recommend consuming our Ossetra caviar in one seating for the best tasting experience. Once opened, it can typically be kept in the fridge for up to 48 hours or at room temperature in its original packaging for up to 24 hours. Always consult the label for a precise recommended best-by date.
Shipping & Delivery
Our Ossetra caviar is shipped the same day (for orders placed before 1:00 PM EST) and will typically arrive within 1 business day. Orders placed Wednesday afternoon through Sunday will ship on Monday and typically arrive on Tuesday.
Our caviar is shipped using a Next-Day (Overnight) shipping service and packaged carefully in temperature-controlled packaging to guarantee freshness.

Our Ossetra caviar is sourced ethically and legally from the finest aquaculture farms in the world. We do not sell any wild or black-market caviar. Protecting this historic and endangered species is extremely important to our mission and 10% of our profits are donated to various organizations that work to protect wild sturgeons and restore their natural habitats around the world.
How our Ossetra Caviar is Made
Raised sustainably and ethically in state-of-the-art aquaculture facilities, each Russian sturgeon is hand-picked at peak maturity using the latest filtering and ultrasound technology. The fish roe is extracted using labour-inducing techniques and then carefully filtered, inspected, cured, and aged. Once ready, the Ossetra caviar is then immediately packaged and made available online for purchase to ensure ultimate freshness, flavour profile and texture.
About Ossetra (Russian) Caviar
Ossetra caviar comes from the Russian sturgeon, one most prized sturgeon species found in the wild in the Black and Caspian seas near Russia, Ukraine, Iran, Bulgaria and several other countries.
The Russian sturgeon can grow up to an impressive 2.35 meters long (almost 8 feet) and weigh as much as 115kg (255 lbs). Females can take up to 16 years to mature and begin producing their precious roe (fish eggs).
