Everything you need for your caviar tasting is in this box. Follow these steps and you'll be tasting like a connoisseur in about 15 minutes.
Before the big day
Refrigerate the caviar, crème fraîche and blinis as soon as your box arrives. Keep the caviar in the coldest spot, usually the back of the bottom shelf, never the door.
- Caviar: keep the tin sealed until you're ready to serve.
- Crème fraîche and blinis: use by the date on the package.
Good to know
We don't recommend freezing caviar. It softens the pearls and dulls the flavour.
Serve it cold
Caviar tastes best well chilled, but not straight from the fridge.
- Take the sealed tin out 15 minutes before serving to let the flavour open up.
- For a special touch, nest the open tin in a bowl of crushed ice to keep it cold on the table.
- Plan to finish it in one sitting. Caviar is at its best right after opening.
Keep it away from sunlight and heat while you prepare everything else.
Opening the tin
Caviar tins are vacuum sealed, so the lid will feel snug.
Tilt the tin slightly on its side.
Slip the thin edge of the tin opener under the rim of the lid.
Gently twist the opener until the lid releases.
Glass jar?
Simply twist off the lid, no opener needed.
Preparing the blinis and crème fraîche
Serve the blinis chilled or lightly warmed. Warm blinis with cold caviar is the classic contrast.
Oven
350°F (180°C) on a baking sheet for 2 to 3 minutes.
Pan
Dry non-stick pan over medium-low heat, about 30 seconds per side.
The blinis are packed tightly to stay fresh, so separate them gently. A quick warm-up makes this easier. Let them cool for a minute before serving.
Stir the crème fraîche and serve it cold in a small bowl with a teaspoon.
How to taste
Serve with the Mother of Pearl spoon only, as metal can leave a metallic taste. Scoop gently from the top and never stir or press the pearls.
Step 1
First bite, on its own
Take a small spoonful plain. Let the pearls rest on your tongue, then press them gently against the roof of your mouth. Notice how the flavour builds and lingers. Don't chew.
Step 2
The classic bite
Top a warm blini with half a teaspoon of crème fraîche and a small spoonful of caviar, then eat it in one bite.
Tip
Go light on the crème fraîche. It should balance the caviar, not cover it.
How much per person
| Caviar | Serves | Topped blinis (approx.) |
|---|---|---|
| 28 g | 1 to 2 people | 8 to 12 |
| 50 g | 2 to 3 people | 10 to 20 |
| 100 g | 3 to 4 people | 20, with caviar to spare |
For sets with several tins, add up the grams. Each pack holds 20 blinis.
What to drink with it
The classic match
Champagne or dry sparkling wine
Look for Brut or Extra Brut. Crémant and Cava work well too.
The tradition
Vodka
Served ice cold in small glasses.
Fresh and crisp
Dry white wine
A Chablis or Muscadet.
Alcohol-free
Sparkling water
Ice cold, with a twist of lemon.
Want to try more?
Try a spoonful on soft scrambled eggs, buttered toast, a baked potato with crème fraîche, or a lightly salted potato chip. Chives make a nice garnish. Skip onion and heavy lemon, which mask the caviar.
Leftovers?
Press the tin lid down firmly, or twist the jar lid back on, and return it to the coldest part of the fridge. Enjoy within 48 hours.
