Yes. Our Beluga is sustainably farmed from Acipenser Huso Huso in Italy. Wild Beluga from the Caspian Sea has been prohibited in Canada and the United States since 2005 under CITES conservation regulations — farmed Beluga is the legal and sustainable path to the same extraordinary experience.
How does Beluga compare to Osetra?
Beluga is milder, butterier, and more enveloping — often described as the purest caviar experience. Osetra is nuttier and more complex with a longer finish. The amount of caviar you need will depend on the number of people who will be enjoying it. As a rule of thumb, 28 grams (1 ounce) is enough for 1 to 2 people.
Can I freeze Beluga Caviar?
Although we do not recommend doing so, you can freeze a sealed jar or tin of caviar for up to one year. The caviar will lose some of its flavor and texture as time goes on.

A sealed jar or tin of caviar should be refrigerated between -2 to 2 Celsius (28 to 36 Fahrenheit) to preserve its freshness, flavor, and texture.
Is your Beluga Caviar wild or farmed?
All our sturgeon caviar products are sourced from sustainable farms with the exception of our Lake Sturgeon, which is sourced ethically and sustainably from the wild in Quebec.
Is your Beluga Caviar pasteurized?
Our caviar products are pasteurized and salt-cured unless otherwise stated in the product description.
Will my order spoil if I am not home to receive it?
All orders are shipped in weather-proof packaging with an ice pack to preserve freshness for up to 72 hours.
