You Will Need

• 1 × 125 g packet of Truffle Polenta mix
• 500 ml water or low-sodium vegetable stock, plus extra hot water if needed
• 20 g unsalted butter
• 25 g Parmesan, finely grated (optional)
• Salt and freshly ground black pepper, to taste

Method

1. Heat the liquid. Bring the water or stock to the boil in a heavy-based saucepan.
2. Add the polenta mix. Gradually pour in the entire packet in a thin stream, whisking continuously to prevent lumps.
3. Cook gently. Reduce the heat to low and cook for approximately 5–10 minutes, stirring continuously, until thick, tender, and creamy.
4. Adjust the consistency. If the polenta becomes too thick, add hot water a little at a time until soft enough to spoon.
5. Finish and serve. Remove from the heat and stir in the butter and Parmesan, if using. Taste before adding salt, as the mix already contains seasoning. Finish with black pepper, if desired, and serve immediately.

Pro Tip: Polenta thickens as it stands. Stir in a splash of hot water to loosen it before serving.
